Paneer Kheer

Paneer kheer is fairly simple to make .I make this a night before and serve it chilled the following day.The soft grainy texture is what makes this dish special.

Ingredients: Milk 4 lit
                   Cottage cheese or Paneer ; 1/2 kg
                    Condensed Milk : 3/4th tin,or modify according to your taste
                    Pista, almonds and kishmish to garnish
                    cardamom powder : 1/2 tsp
                   
Method :

1.Bring milk to a boil and simmer till it reduces and becomes thick ,stirring in the cream as it forms on
                the surface.
                 

2. Grate paneer with a big grater directly over the milk and reduce it further,stirring in the cream from its surface every few minutes .Continue the process till the consistency becomes rabri like with the threads of paneer evenly coated with creamy reduced milk.              


3. Add condensed milk and stir in gently.let it simmer for about 5 min more .Add cardamom powder.


4. Pour in a serving bowl and garnish with finely sliced pista and almomds.


5. Refrigerate and serve chilled.
